Panna Cotta with Forest Fruits
First, we will take care of the gelatin – so we will add 4 tbsp of gelatin powder in a small bowl, after which, add half a cup of warm water and mix with a whisk. (You can add an extra 1-2 tbsp of gelatin powder to make the dessert thicken faster)
Bring a medium saucepan and then add the liquid cream.
When the liquid cream is starting to steam, add the sugar powder, vanilla sugar and vanilla essence while stirring and by doing so, the composition wont make lumps.
After that, grate lime zest and keep stirring for a couple of minutes. Leave aside to cool meanwhile we can prepare the delicious fruits sauce!
In a pre-heated small saucepan add the forest fruits and use a wooden spoon to stir.
Next we add 4 tsp of Jägermeister, 4 oz. of water and 1 tablespoon of corn starch, then mix until the composition is homogeneous.
Add 1 more tablespoon of corn starch and mix it well. (If the fruits sauce is too sour, you can add sugar depending on your taste)
Now let’s combine the warm base, in our case the creamy liquid, with the gelatin while whisking as you go. (Rub a little of the cream mixture between your fingers to make sure the gelatin has dissolved; it should feel smooth, not grainy)
After that, add 4 tsp of orange essence and stir well.
Place the molds on the table, add 1 tbsp of fruits sauce on the bottoms on each one.
Use a ladle to pour the composition of panna cotta on edges of the mold, to avoid disturbing the fruits sauce base.
Also, you can serve this delicious Panna Cotta with Forest Fruits sauce in deep glasses or wine glasses, giving it a fancy dessert look!
Bon appetite!
