Cheesy Chicken on Bed of Vegetables
First let’s boil a few carrots. After boiling take them out in in a bowl with iced water.
Next add salt & pepper, oregano and garlic powder on the chicken boneless thighs.
Take a grill pan, add a few drops of cooking oil and place the chicken to cook.(turn them each side)
Now cut the carrots and put them in a bowl.
Add the sliced scallions, lemon juice and salt & pepper.
Now stir well with a spoon.
Cut in half a few cherry tomatoes.
Bring the oven pan, place a baking sheet in it.
Now place the fried chicken.
On top of the each chicken piece add 1 slice of mozzarella.
Add some cherry tomatoes and cheddar and place it in the over for 10 minute at 356F/180C.
Now place the vegies on a dish.
On top of vegies place 1 piece of Cheese Chicken.
