Fish Stew with Rich Tomato Sauce
We prepared today a delicious Fish Stew with a rich tomato sauce. This is a really easy recipe, really flavorful and really healthy! The stew works best with a firm white fish, such as halibut, cod or mackerel (the one we used in our recipe). This meal can be easily customized according to preference.
Fish Stew Tomato Sauce
Wash and cut the fish of head and tail then add salt and pepper.
Slice 2 medium onions and 2 peppers.
Cut 1 medium zucchini, take out the core then chop.
Now blend 2 tomatoes and add thyme to the juice.
Add couple of drops of cooking oil into a pan, then place the fish to fry at low heat for 5 minutes.
Turn the fish to fry on both sides.
Now take out the fish on a dish
Put the onion slices in the pan and stir
Add the peppers and zucchini and stir
Add salt & pepper
Add 1 diced garlic, stir
Add cube stock and water
Add the tomatoes and thymus
Add 1 chopped chilli pepper
Add bay leaf and stir well
Now put the fish back in the pan and let it cook for 10 more minutes
After placing in the fish in a dish add parsley & 1-2 slices of lemon
