Ingredients

  • Salmon 100g
  • Eggs  4
  • Flour 2 cups
  • Butter 1/2 cup
  • Tomatoes sauce
  • Fennel
  • Scallion
  • Garlic gloves
  • Chilli
  • Basil leafs
  • Olive oil
  • Cognac 1/2 cup
  • Water
  • Aromatic apricot wood

Let's start

For dough

First you need crack 4 eggs and separate the yolk from the egg white

In a large bowl add 2 cups of flour, salt and pepper and mix with a spoon

After you’re done with the mixing add 4 egg yolks and keep mixing

Pour some water and mix

Use your hands to make a round dough

Wrap the dough and save it for later

Salmon preparation

Remove the skin and dice the salmon

Now dice the fennel and chop the scallion

Take 1 garlic glove, 1 chilli, few basil leafs and chop them

Next, add few drops of olive oil into a heated pan

Then add 1/2 cube of butter and let it melt

Now add the diced salmon and vegetables and mix them with a wooden spoon

Add salt and pepper

Add 1/2 cup of cognac and cook it for 15 minutes at medium heat

Infuse the salmon with aromatic apricot wood smoke for a couple of minutes

Tortellini preparation

Bring back the dough and use a roller to make a thin layer

Use a cup to make round dough shapes

Add the salmon mix to each dough shape and fold them as shown in our video

Add water, salt and pepper and few drops of oil in a pot

Now add the tortellini into the pot and boil for few minutes

Sauce preparation

In a frying pan add few drops of oil, chopped fennel, crushed garlic cloves and chilli and mix them

Continue with adding the diced tomatoes sauce and mix

After couple of minutes add salt and pepper and pour a little bit of water

Add 1/2 cup of heavy cream and mix

Now add the tortellini, shredded cheese and chopped parsley

For an extra flavour you can smoke infuse it one more time!
