This recipe of stuffed eggplant with beef & prosciutto is easy enough for a dinner and fancy enough to serve your family and friends! It’s similar in flavor to eggplant Parmesan, but with ground beef & prosciutto in the filling.
Stuffed eggplant with beef & prosciutto
First, cut the eggplant in half and scoop out the inside using a spoon. (save the core for later)
Now add few drops of oil and then add salt & pepper. Leave it in the oven for 10 minutes at 356F / 180C.
Next chop the inside of the eggplant in cubes and put them in a large bowl.
Cut half an onion and chop it, then add it to the eggplant cubes.
Now crush a few garlic cloves and leave it aside.
Next chop few slices of prosciutto and put them with the ground beef.
Let’s prepare the tomatoes sauce. In a blender add chopped tomatoes, few basil leaves, salt & pepper, crushed garlic cloves and some olive oil.
Heat up a pan, add some oil and then add the chopped eggplant. (stir for couple of minutes)
Next add the ground beef and chopped prosciutto.
When the beef gets that brownish color, add oregano and the tomatoes sauce. (keep stirring)
Now add 1/2 cup of sour cream and stir well.
Fill each half of the eggplant carcass with the beef & prosciutto mix, then decorate them with cheese slices.
Leave it in the oven for 20 minutes at 356F / 180C.
Cut some basil leaves, dice few garlic cloves and chop prosciutto slices.
