This Chicken Breast recipe with Curry, Capers and Cherry Tomatoes is easy to prepare, very delicious and really cheap. Cooking the chicken breast on high heat for the first 2 minutes will color it nicely, then reducing the heat to medium will allow the chicken to cook through without drying out.
Chicken Breast with Capers & Cherry Tomatoes
Add salt & pepper on both sides of the Chicken Breast then place between 2 sheets of plastic wrap.
Pound it with a meat mallet to tenderize the chicken breast.
Add a few drops of oil into a preheated pan.
Then place the chicken breast in the pan.
Add a small butter cube and cook it for about 2-3 minutes on each side.
After that take out the chicken breasts and then add the capers in the same pan.
Now add a few cherry tomatoes to the pan.
Next add diced garlic and then a mix of water and curry.
Now bring back the slighly cooked chicken breasts, add them to the frying pan. Turn them on each side to cook.
Next squeeze some lime juice and then add 1-2 butter cubes.
After the dish is done sprinkle some chopped parsley and you’re done. Bon appetite!
