Zucchini omelette with Bacon
First, in a large bown add 6 eggs, 1 cup of cottage cheese and salt & pepper. Whisk thoroughly until you obtain a homogeneous composition.
Next, add few drops of oil in a frying pan, then add the chopped bacon. (fry for couple of minutes)
When you’re done with the bacon, add the sliced onion rings. (fry for couple of minutes)
Now add the chopped garlic, salt and pepper and stir well.
Next add the smoked paprika powder and the canned corn. (keep stirring for couple of minutes)
After that, add sliced zucchini ring and few drops of cooking oil.
Next add the eggs and cheese mixture in the pan, and then add the fried bacon.
When the zucchini omelette with bacon is done, sprinkle some parmezan on top.
